Receiving her B.S. and M.S. in Foods and Nutrition from Ohio University, Elizabeth has been the staff dietitian for the Seretean Wellness Center since 1990. Certified by the Oklahoma State Board of Medical Licensure and Supervision, she is a member of the American and Oklahoma Dietetic Association. As director of nutrition services for the Wellness Center, she assists and advises students, faculty, university staff, and community members about good health and disease prevention by focusing on the need to change nutritional habits into life-long commitments. In addition to counseling individuals with diabetes, cardiovascular disease, eating disorders, and other food-related concerns, Elizabeth has given presentations to university athletic teams, undergraduate nutrition classes, and community groups on a variety of nutrition topics. Since its inception in 1992, she has been a member of the Eating Disorder Task Force on the OSU campus. Among the programs offered at the Seretean Wellness Center, Elizabeth has developed and implemented a cooking series to teach people how to prepare foods lower in fat, sodium, and cholesterol. This program has drawn individuals from both the university and Stillwater community interested in food preparation as well as healthy cuisine.
